Default Making Jerky for the first time

I decided this year I am going to start making my own jerky out of my deer. I liked my girlfriends dads recipe so I am going to start with that for now. I ground the meat up and am going to use a jerky gun to make strips and then dry them in a dehydrator. Anyways what I was wondering is if any of you who make your own jerky had any tips or recipes you would like to share?

Well Ive only made jerky one time and it was from beef and I just had them cut meat in about 1/4" strips and then I marinated them for a good 24hrs. Then I put it all in a dehydrator and it was probably a good 8 hours I think, its been a while.

Its kinda labor intensive, but its worth it if you like jerky as much as I do. I work with a guy that makes summer sausages and jerky and stuff from deer meat and so I get most of what I want from him now instead of making it.

I personally believe that a good jerky is 90% the seasonings you uses. I love an explosive type flavor. I dont car for heat or spice, I want flavor and once you find what you like be sure to marinade it plenty to get that flavor throughout the meat.

poor bambi. i love beef jerky. i like the dry chewy jerky. i used to buy from ebay man, it taste like chewing on leather shoe lace. they were terrible. there's no flavor in it either so bland! cabela's and bass pro shop magazine sell ingredient flavor for beef and deer jerky.

Bison jerky is really tender if given the right amount of attention. It has a better consistency than beef, alto can be expensive for the meat itself.
